These noodles feature a traditional blend of Asian delicacy where the tanginess of Peranakan and Straits Born recipes fuse together to form this dish. Together with the red chillies served by the side, this is truly a sumptous dish. |

- 500 grams of yellow flat noodles
- 100 grams of pork belly ( rinsed and lightly washed )
- 100 grams squid or calamari
- 100 grams large shrimps
- 100 grams of Chinese vegetables ( xiao bai chai, pak choi, kai lan )
- 50 grams of beansprout
- 2 small or 1 large lime ( or 1 lemon )
- 2 eggs ( beaten )
- 2 green chilles ( sliced )
- Parsley for garnishing
- 2 tablespoons of olive oil / vegetable oil
- 2 cups of water
- 2 cloves of garlic ( Chopped )

Spices |
- 1 medium onion, diced/sliced
- 1 tablespoon dark soy sauce
- 1/2 tablespoon of salt
- 1/4 piece of shrimp paste ( belachan )

Boil the pork belly for about 3-5 minutes in 2 cups of water.
Slice pork belly thinly and do not throw water.( to be used as stock ) |

Pour in oil, onion, garlic, shrimp paste, calamari and shrimps, stir fry until fragrant. After 2-4 minutes, add in Chinese vegetables. |

Add in beansprout and noodles, stir fry all together for about 5-7 minutes until noodle is cooked. Add in salt, soy sauce and eggs. |

Lastly, add in stock, squeeze in the lime or lemon and cover lid for 2-3 minutes. Garnish with parsley and 2 green chillies. Serve. |

Cook's Tip |
| |
Pork belly can be substituted with chicken.
Handmade yellow flat noodles can be substituted with any instant dried noodles. ( noodles need to be soaked for 1-2 minutes in half-boiled water and drained before use. )
