Old Cucumber Meatball Soup
Refreshing Old Cucumber Meatball Soup...Another classic of chinese dishes

Whenever someone in the family has a cough or a flu, either my dad or me will concoct up this soup for everone to drink. According to old tales, this soup builds up the immune system and is very nutritious to drink. I got to agree, considering the wolfberries and red dates used.

  Ingredients
 
  • 250 grams of minced pork
  • 1 tube of egg tofu
  • 5 tablespoon heaps of dried wolfberries
  • 15-20 dried red dates
  • 1 small or medium sized old cucumber
  • 2 cloves garlic
  Spices
  • 1 tablespoon light soy sauce
  • Ground white pepper
  • Salt
  • 1 tablespoon sesame oil
 
  Directions
1 Boil water in a pot. Thereafter, add in the cloves of garlic peeled. Beforehand, slice the old cucumber into cubes and when the water is boiled, add them in as well.

2 Next, add in the dried wolfberries and dried red dates. Allow the soup to boil again before adding in the meatballs.
   
3 Meanwhile, prepare the meatballs. Mix the minced pork together with the egg tofu with a fork. Mash them well. Hence, add in the spices and a pinch of salt. Mix well again.
   
4 Once the meat mixture is ready, shape a tablespoon full of each mixture into a small sized meatballs. Once the water in the pot is boiled again, add in the meatballs.
   
5 Do not disturb the soup for at least 2 hours to prevent the meatballs from breaking and allowing the old cucumber to soften. Sprinkle salt to taste.
   
6 Once done, serve with white rice or drink it by itself.
  Cook's Tip
  This is a soup best served hot and when boilied for longer than 4 hours or even a day.
