Oriental Pork Ribs Soup
Refreshing and clear. Chinese soup with a meat base and nutritious herbs.

This time, the recipe comes from my mother's side of the family. Inherited from my maternal Grandmother, the soup is surprisingly clear and refreshing. The delicious meaty and sweet taste is one of the flavours that is oh so unique and nutritious.

  Ingredients
 
  • 250 grams pork ribs
  • 8 pieces of red dates. dried
  • 50 grams of wolfberry fruits, dried
  • 1 piece cardamom
  • 1 carrot
  • 1/2 onion
  • 1 star anise
  • 2 tablespoons sesame oil
  • 1 medium sized pot half filled with water
  • 2 potatoes
  Spices
  • 1 teaspoon of grounded white pepper
  • 2 tablespoon of light soy sauce
 
  Directions
1 Rinse pork ribs in icy cold water. Rinse well. Marinate pork ribs with grounded white pepper and light soy sauce. Leave to set for 10 minutes.

2 Meanwhile, chop carrot and onion into small cubes. Peel potatoes and cut into quarters. After 10 minutes, add in the pork ribs into the pot.
   
3 Next, add in the red dates, wolfberry fruits, cardamom, carrot, onion, star anise, sesame oil and potatoes.
   
4 Leave to boil for 25 minutes. Dash with pepper and serve.
   
  Cook's Tip
  Add in more wolfberries for a sweeter taste.
