Revitalising Vegetable Soup
Using 5 of the most common garden vegetables, this soup refreshes you both on the inside and out.

I first obtained this recipe in the local newspaper, and it seemed remarkably easy to do. The best benefit of this tasty soup is the nutrition value where there are 5 different types of vegetables used. A clear soup as an accompaniment on a cold day.

  Ingredients
 
  • 2 stalks celery
  • 2 cabbage leaves
  • 1/2 red bell pepper / carrots or both
  • 2 tomatoes
  • 1 large onion
  • 4 cups water
  Spices

 
  Directions
1 Clean celery, cabbage leaves, red bell pepper and tomatoes. Cut all vegetables into bite sized pieces.
   
2 In a pot, put in four cups of water and all the vegetables. Bring to a boil, lower to a medium fire and boil covered for 10 minutes. Serve.
   
  Cook's Tip
 
  • The soup can be boiled longer if softer vegetables are desired, but add more water to the pot to ensure that the vegetables are always covered in water while cooking.
  • However, the vegetables should not be overcooked as this can lead to decolourisation of the vegetables and leading to a soggy mess.
  • It is essential to eat and drink all the contents of the soup as the whole concoction will provide roughage for the cleansing process and vitamins and minerals for revitalisation.
