Heavenly Scalloped Potatoes
Potatoes with an elegant design and wholesome taste

When done right, the potatoes will be soft and tender on the inside and the herbs will boost the unique flavour of the dish. If you are having a party, I am certain this will be a joy for your guests.

  Ingredients
 
  • 1 teaspoon olive oil
  • 4 teaspoons plain flour
  • 1 cup skim milk
  • 3 large Russet potatoes, thinly sliced
  • 1/4 cup Parmesan cheese, grated ( optional )
  Spices
  • 2 cloves garlic, crushed
  • 1 onion, sliced thinly
  • 2 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1/4 teaspoon grounded nutmeg
  • 1/2 teaspoon black pepper
  • a pinch of salt
  • Fresh Herbs for garnishing ( optional )
 
  Directions
1 Preheat oven to 190 degrees Celsius. Lightly brush a baking dish with oil.

2 In a large saucepan, heat oil over medium heat. Add garlic, onion and thyme. Gently fry for about 4-5 minutes. Add flour and stir over heat for 1-2 minutes. Add milk and 1/4 cup of water.
   
3 Bring to a boil, stirring until liquid thickens. Add nutmeg and seasonings. Simmer for another 2 minutes and remove from heat.
   
4 Place 1/3 of potatoes in the baking dish in a circular motion and top with half the onion mixture in step 3. Repeat procedure until all potatoes are used. Next, sprinkle the cheese on the top. Cover the baking dish with aluminum foil.
   
5 Bake for 40-45 minutes which then remove the foil. Continue baking until top is brown. Garnish with fresh herbs and serve.
   
  Cook's Tip
 
  • For the freshest flavour of nutmeg, buy the whole nutmeg and grate what is needed.
  • Potatoes are to be stored in a cool dark place. Refrain from placing it in refrigerators as the starch will turn into sugar.
